Madrid, 7 March 2022. Under the hallmarks of MABEL Hospitality; haute cuisine, exclusive spaces and locations, excellence in service and a complete leisure experience thanks to its commitment to live music on a daily basis. TOTÓ, which opens its doors this Monday 7 March at number 38 Paseo de la Castellana in Madrid, in the premises next door to TATEL, is inspired by Mediterranean and Italian recipes from the 50s and 60s. A cuisine marked by an enormous creativity, forced by the harshness of the times, which allowed the discovery of new techniques, products and flavours, from the most traditional raw materials, and which laid the foundations of today’s Italian cuisine.

With the prestigious Italian chef Emiliano Celli at the helm (former chef of the Taverna Trilussa in Rome), TOTÓ’s recipes are characterised by the utmost respect for the product, which translates into a careful selection of raw materials, always opting for organic and sustainable products, and a preparation based on the most traditional techniques. The result is a cuisine full of aromas, flavours and colours that take you back to classic Italy, to the family cuisine of a lifetime. In addition, TOTÓ has an impressive wine list with national and international references where the Italian wine offer stands out, one of the most complete in the country.

Inspired by the golden age of Italian cinema in the 50s and 60s, TOTÓ pays homage to the protagonist of the legendary film Cinema Paradiso, which represents the purest love for cinema during the post-war period, one of the few ways of escape for a society shaken by war. An Italy that re-emerges stronger than ever in every sense, including its great passion: gastronomy. Cooking and cinema become one of the greatest distractions to forget past years and face a new future full of optimism.

The TOTÓ concept is the prelude to a unique space in Madrid, linked to the global trend of rough luxury. The spectacular design of the new restaurant is the work of MABEL Design, the interior design studio of the MABEL CAPITAL group, directed by Marta Fueyo (formerly Soho House Design). The décor features soft, warm lighting over the tables and noble materials such as reclaimed wood, exposed beams and stucco, complemented by a selected collection of photographs of Italy in the 1950s. TOTÓ has an imposing and warm dining room of over 600m2, which includes reserved spaces, a spectacular bar open to the kitchen, and a central stage, presided over by a piano, to enjoy its daily programme of live music.
TOTÓ recovers the essence of traditional Italian cuisine that lays the foundations for today’s cuisine, and its space, the place where, around a table, you can forget the world for a few hours. Souvenir gastronomy and daily live music make TOTÓ the perfect place to enjoy not only lunch or dinner, but also an aperitif around its spectacular bar. All without forgetting its drinks menu, which includes everything from the most classic cocktails and distillates to the most daring Mediterranean-inspired drinks.
